
Fresh strawberry basil ricotta toast with honey balsamic drizzle, say that 10 times fast! If avocado toast was the “it” dish of the 2010s, its cousin, ricotta toast, should be the “it” dish of the 2020s. Sweet or savory, the rich creamy ricotta can be paired with anything from sun-dried tomatoes for a savory version. Or make it sweet, like in our recipe today, with strawberries. It is perfect for either a spring or summer dessert or a brunch item. Between the sweetness of the strawberries, the tang of the lemon in the ricotta, or the punch of the basil, this garden fresh dish is a hit.
My husband, Tom, is not a big fan of vinegar so he was unsure when I told him I was making a balsamic reduction sauce. But, with the sweetness of the honey, this balsamic reduction doesn’t taste overly vinegar-y. It is sweet with a little tartness. It would be delicious over homemade ice cream with fresh berries as well.
Strawberries are one of my favorites in my garden. In fact, most of my strawberries don’t even make it inside. When we have garden parties, myself and guests simply sit in the sunshine, and pop the little sweet nuggets between sharing stories. But, for the strawberries that do make it inside, strawberry ricotta toast is one of my favorite ways to enjoy them.
When growing your own strawberries, you want to make sure you give then enough space. I have a habit of trying to put too many things in the garden too close together. Strawberries like to send off runners, making new strawberry plants, but they need the room to do that without getting crowded out.
Of course, this recipe is best enjoyed on freshly baked bread. Our rustic artisan bread round loaf is the perfect hearty bread to hold up to grilling and loaded with toppings.

Ingredients
For Balsamic Reduction:
1/2 cup balsamic vinegar
1/4 cup honey
For Ricotta Toast:
4 slices of thick crusty bread
12 large strawberries
8 leaves of fresh basil
1/2 tub of full fat ricotta cheese
1 rounded tsp honey
zest of 1/2 lemon
Instructions
To make honey balsamic reduction, combine high quality balsamic vinegar with honey in a small pot. Simmer for about 10 minutes. Reducing volume by half.
On a grill or a grill pan, grill bread until toasted on both sides.
Slice strawberries and basil.
Whip ricotta with honey and lemon zest.
Top grilled bread with ricotta mixture, strawberries and basil. Then drizzle with balsamic reduction.
